Jacques Pépin Art of the Chicken

From legendary chef Jacques Pépin, a complete teaching cookbook on his favorite ingredients, the chicken and the egg, with 60 to 75 recipes, techniques, The Apprentice-esque stories, with his beloved illustrations and artwork Chicken may not be a fancy or extravagant ingredient, but for master chef Jacques Pépin, it is one of the most symbolic. In this beautifully illustrated cookbook-cum-memoir, Jacques reminisces on his life through the lens of the humble bird, from his childhood in rural France, where he chased chickens and watched as his maman turn them into her poulet à la crème, to his demanding apprenticeship and long, illustrious career--cooking Chicken Chasseur for Charles de Gaulle and his family, turning down a chance to work as JFK's White House Chef for Howard Johnson's, and appearing on television alongside food-world revolutionaries like Julia Child. Throughout are Jacques' favorite chicken and egg recipes, loosely relayed as if he were divulging them over a dinner table, as well as his remarkable paintings of the bird. This unique little book is the next best thing to a visit to Jacques's home, which would include a tour of his art studio, captivating conversation as he cooks, and a toast with a glass of wine over a simple meal of perfectly roast chicken.

Playing the Cello, 1780–1930

This innovative study of nineteenth-century cellists and cello playing shows how simple concepts of posture, technique and expression changed over time, while acknowledging that many different practices co-existed. By placing an awareness of this diversity at the centre of an historical narrative, George Kennaway has produced a unique cultural history of performance practices. In addition to drawing upon an unusually wide range of source materials - from instructional methods to poetry, novels and film - Kennaway acknowledges the instability and ambiguity of the data that supports historically informed performance. By examining nineteenth-century assumptions about the very nature of the cello itself, he demonstrates new ways of thinking about historical performance today. Kennaway’s treatment of tone quality and projection, and of posture, bow-strokes and fingering, is informed by his practical insights as a professional cellist and teacher. Vibrato and portamento are examined in the context of an increasing divergence between theory and practice, as seen in printed sources and heard in early cello recordings. Kennaway also explores differing nineteenth-century views of the cello’s gendered identity and the relevance of these cultural tropes to contemporary performance. By accepting the diversity and ambiguity of nineteenth-century sources, and by resisting oversimplified solutions, Kennaway has produced a nuanced performing history that will challenge and engage musicologists and performers alike.

Glutathione and Sulfur Amino Acids in Human Health and Disease

The complex roles of glutathione and sulfur amino acids in human health Glutathione (γ-L-glutamyl-L-cysteinylglycine, GSH) is a major antioxidant acting as a free radical scavenger that protects the cell from reactive oxygen species (ROS). Sulfur amino acids (SAAs), such as methionine and cysteine, play a critical role in the maintenance of health. GSH depletion as well as alterations of SAA metabolism are linked to a host of disease states including liver cirrhosis, various pulmonary diseases, myocardial ischemia and reperfusion injury, aging, Parkinson's disease, Alzheimer's disease, sepsis, and others. This book provides researchers with a comprehensive review of the biochemistry, absorption, metabolism, biological activities, disease prevention, and health promotion of glutathione and sulfur amino acids. The twenty-two chapters explore such topics as: Chemistry, absorption, transport, and metabolism of GSH and sulfur amino acids Antioxidant and detoxification properties of GSH and sulfur amino acids, highlighting the enzymatic systems involved in antioxidant defenses Biological activities of GSH and sulfur amino acids and their role in modulating cell processes Role of GSH and sulfur amino acid deficiency and alteration in the onset of diseases and in aging Protective effects exerted by GSH and sulfur amino acids when used as drugs, functional foods, and nutraceuticals in humans and animals Special attention is paid to the molecular mechanisms for the modulation of transcription factors and enzyme activities, as well as the nutritional and therapeutic significance of dietary sulfur amino acids as shown in human and animal models. With more than 2,000 scientific references, this book provides food scientists, nutritionists, biochemists, food technologists, chemists, molecular biologists, and public health professionals with a comprehensive and up-to-date examination of glutathione and sulfur amino acids in human health and disease.

Tales of Vice and Virtue

Here is presented for the first time an extraordinary medieval text, the first Old French Vie des Pères. The Vie des Pères is in fact a collective text comprising three branches and, at its fullest, over seventy individually enclosed pious tales / miracles. The first Vie – the first forty-one or -two tales – dates from the first third of the thirteenth century. It is a vitally significant but hitherto neglected part of the Old French canon. Indeed, in his preface to this volume Michel Zink, one of the most respected medievalists of his generation, notes that the qualities of the Vie des Pèrs ‘devraient valoir à son auteur une place au voisinage de celle qu’occupent pour nous celui de la Chanson de Roland ou Chrétien de Troyes.’ The tales are remarkably well written and offer fascinating glimpses of thirteenth-century life and spirituality. They were also extremely popular in Medieval France. Sharing close links with a number of traditions – fabliaux, Saints’ Lives, Miracles of the Virgin, Romance, Sermons – the Vie des Pères has value for those interested in many branches of vernacular literature, codicology, lexicography, art history, theology and philology. Tales of Vice and Virtue – the first sustained analysis of the entire first Vie des Pères to be published – is a groundbreaking book providing readers new to the text with detailed commentaries, offering abundant intertextual information for romance philologists, and suggesting many new areas for further research.

Sound of the Crowd: a Discography of the '80s (Fourth Edition)

SOUND OF THE CROWD: A DISCOGRAPHY OF THE '80s is the ultimate record collector's guide to the 1980s. In the era of multi-formatting, picture discs, coloured vinyl, multiple remixes, funny shaped records and tiny CDs you could lose down the back of the sofa, this book lists every format of every single, EP and album released in the UK in the 1980s by over 140 of the decade's biggest acts, from ABBA to Paul Young. This fourth edition has been fully revised and expanded to include even more acts than ever before, with additional sections to cover Band Aid-style charity congregations and compilation albums from the early '80s K-Tel efforts through to the Now That's What I Call Music series and its competitors. Compiled by Steve Binnie, editor of the '80s music website Sound of the Crowd and writer, producer and co-host of the unconventional '80s chart show Off The Chart, broadcast weekly on Mad Wasp Radio.
